Your question comes at a very interesting time. For the past 3 years, the answer would be that the sound files are in ZZ_1.dat, but even if extracted, the .ess sound files would be encoded and unreadable, much less replaceable. However, it turns out that thanks to a guy named id-daemon, we are extremely close to now being able to decode and encode these sound files from .ess to .wav.
